We define it as Kuzina del Sol. Because Sun is the one that makes us grow, mature naturally with one and only purpose, sincere human communication. We all become one under the same Sun.

If something unique characterizes the authentic traditional Mexican cuisine is the process – more a ritual of the BARBACOA oven that originates from the central states of Mexico with
its use being more common in the state of HIDALGO. At Matzenta kuzina del sol – the BARBACOA oven is made with Cretan firebricks – over 100 years old – and cooks daily our free range meat. The smell of olive wood together with Cretan herbs such as marjoram & fresh verbena steams for over 8 hours our organic pork of Vavourakis farm and wild goats and sheeps from the rocky mountains of Crete. Our meat is wrapped in fresh Cretan banana leaves and other times in agave americana leafs to get an even more special and unique taste!
