We are packing our bags, but we’re leaving with more than we arrived with. This trip to the sacred lands of Oaxaca was meant to be a familiar path, yet life had a way of widening the trail. This time, the journey pulled us toward the Pacific—and specifically, the soul of Peru.
The Pacific’s Character: There is a profound difference between the ocean you admire from a distance and the ocean you feel. The Pacific has a weight to it. It’s a constant presence. You taste it in the salt-heavy air, you feel its rhythm in the local markets, and you smell it in the way the food is prepared along the coast.
It’s bold, it’s intense, and it’s undeniably alive.
Growing Stronger: We came looking for inspiration, but we’re heading back with something more practical: we are gastronomically wiser. We’ve collected stories, spices, and techniques that have changed the way we look at our own kitchen.
We’ve realized that the "Bridge" we build at Matzenta isn't just between two places—it's between the land and the ocean, the mountain and the shore. It is about understanding that food is a living language, constantly evolving as we travel through it.
Looking Ahead: Our bags are heavy with memories, colors, and the lingering aromas of a world we simply adore. We’ve spent the last few weeks absorbing, listening, and learning. Now, it’s time to translate that into something real for you.
We can’t wait to bring these experiences to the table in March. Chicos, get ready—we’re bringing a piece of the Pacific back to the heart of the Mediterranean.
Until the next horizon.

Notes from the Road:
- The Atmosphere: A mix of Oaxacan mountain mist and the crashing Pacific surf.
- The Lesson: Wisdom doesn’t just come from books; it comes from tasting the world exactly where it lives.
- A Thought to Carry: A bridge is only useful if you’re willing to cross it—and keep walking.
