Just a few blocks away from the rhythmic pulse of Oaxaca’s city center, we pushed open a door and stepped into another world. A garden, lush and mystical, where the air feels different—cooler, heavier with the scent of herbs, and vibrating with a quiet, ancient energy.
This is the home of Cocina Istmeña, the traditional cooking of the South.

The Character of the Plate: In the Istmo de Tehuantepec, the food is like the people: strong, vibrant, and unapologetic. We call it Cocina Tradicional, but it’s so much more than a category. It is rooted. It is simple. And yet, it is perhaps the most flavorful expression of the Oaxacan soul we’ve encountered.
The Master at Work: The heart of this garden is Maestra Cocinera Deyanira Aquino. There is a specific kind of magic in the way she moves. She doesn't just cook; she honors the ingredients. Meeting her felt like finding a missing piece of our own puzzle.
At Matzenta, we talk a lot about our "Bridge," and today, that bridge was built on the character of the Maestra. She reminded us that the best "decoration" for a dish isn’t a garnish—it’s the love you have for the raw ingredient.
The Feeling: We left the garden feeling inspired by the strength of the women of the Istmo. Their soul is now woven into our own story. We’re taking a bit of that garden’s mystery back with us to the kitchen.
